Easy Savory Blueberry Sauce
This is a great recipe not only because it is quick and easy, it’s also elegant enough to serve on an occasion such as Valentine’s Day. Your sweetie will think you spent all day on it! Plus, this versatile sauce can be served with a variety of different proteins from tofu to pork, whichever your heart desires.
Inspiration for this dish came from a recipe provided by the Neighborhood Farmer’s Market Alliance. Makes enough sauce for at least 4 entrees.
Ingredients
• 1 T butter
• 1 chopped shallot
• 2 T dry white wine
• 1 cup blueberries (fresh or thawed frozen)
• ¼ t salt
• ¼ cup water
• 2 T Dijon mustard
Directions
Saute shallot in melted butter for several minutes. Add wine and cook until almost evaporated. Add blueberries, salt and water. Cook over medium heat for 5 minutes until sauce thickens. Serve over roasted salmon, chicken, pork, or other protein of your choice.
Wine Pairing
Another great thing about this sauce is that it serves as a bridge that connects the food with wine. In our house, we’ve enjoyed it over salmon and paired with Pinot Noir as well as over chicken and paired with Merlot. It’s particularly lovely over salmon and served with Hestia Cellars Merlot. Our friend Bean recently brought a similar blackberry sauce to a dinner party, served it with roasted chicken and paired the dish with Cabernet Franc. Add some Herbs de Provence to the sauce to match it with Syrah. The versatility of this sauce allows for a number of pairing combinations.
